Cassava Flatbread or Pizza Crust

I have been trying to find different ways to utilize what is grown in my yard and is readily available to Jamaicans. Coincidentally the cassava roots my father planted was ready to be harvested. I saw my mother preparing the cassava in a way new to me, after cleaning the skin off the cassava roots, she rinsed and grated them. She added water to the grated cassava, as if to rinse it. My mom then used a cheese cloth to strain the cassava, what remained in the cheesecloth was cassava dough and the water was left out to dry to make cassava starch which can be used to bake or to iron with. Interesting right!

My mother used the cassava dough to make cassava dumplings. After craving pizza for weeks upon weeks, my mom suggested I use the cassava to make the pizza crust. Eureka!!

Cassava, also known as manioc and yuca, is a starchy tuberous root somewhat similar to yam. It is classified as bitter or sweet, the bitter is usually the type used to make bammy and the sweet is usually consumed as part of meals. When cassava is dried to a powdery form it is then known as tapioca.

Gluten-Free Cassava Flatbread or Pizza Crust

In this recipe, I used the sweet varieties of cassava. The flatbread came out a little crispy on the outside and chewy on the inside. If you use the stovetop method you can determine how crispy you want the outside to be. It tasted really good, actually it tasted better than I expected it to. I personally prefer the oven method, it is easier for me to transfer the dough to the baking sheet than to the frying pan.

Cassava Flatbread or Pizza Crust

Yields 3 Flatbreads/Crusts

1 cup     Cassava flour
2/3 cup  water
1/4 tsp   salt

Directions

  1. Oven Method: Preheat oven to 350°F
  2. Add all ingredients in a bowl and with a clean hand, knead dough.
  3. Separate dough into three balls.
  4. Place one ball on half of a parchment paper or plastic bag and fold other half to cover. Use a plate to flatten dough.
  5. Transfer dough to skillet or baking sheet.
  6. Skillet Method: Cover skillet and fry over medium flame until golden brown on one side. Flip and fry uncovered until golden brown.
  7. Oven Method: Place baking sheet with flatten dough in oven and bake for 15 mins; dough should be golden brown, flipping is optional. Otherwise bake for 20 mins. I add a small amount of but to the surface to moisten it a little, this is completely optional.
