In my quest to find new and interesting breakfast ideas, I searched the refrigerator and pantry to see what I had. As luck may have it, I had a package of bammy in the refrigerator. Mhm what to make.
To get everyone caught up, bammy is a traditional Jamaican flatbread that is made from cassava. Cassava also known as manioc is categorized in two different groups, bitter and sweet. The sweet group is cooked and eaten with meals like yam or potato and the bitter group of cassavas are grated and used to make the bammy.
This sandwich is not difficult to make, I think the only thing that would take some effort is the omelet. I made a cheese omelet but you can add veggies or anything else if you like. I realize one bamelet and a cup of tea fills me up but two would be a good size serving.
1 mini bammy
1 large egg
1/4 cup sharp cheddar cheese
milk or water
- Pour the milk or water on the bammy, just enough to wet it. Pat excess water and fry over medium heat until golden brown on both sides.
- Whisk eggs in a bowl and fry over medium flame. Add cheese and fold all sides in to make a square.
- Place omelet on bammy and a slice of tomato on it. Enjoy.
