I like quick recipes and with that said I really like this one. It has since recently become one of my go to quick bakes. The cookies are sweet, soft and chewy. I had to restrain myself from eating the entire batch in one day, that is how good they are. I used quick oats but you can also use rolled oats, either one will work great as long as it is labelled gluten-free.
Sometimes I switch it up a bit by adding raisins, wine and chocolate chips. I even experimented and added ripe bananas (see Banana Oatmeal Cookies for the recipe) which came out really great. You can also add shredded coconut. I like how simple this recipe is because it makes it really easy for us to alter ingredients.
Chewy Oatmeal Cookies
Prep Time 10 minutes | Bake time 18 minutes | Yields 9 cookies
1/3 cup melted butter
1/8 teaspoon salt
1/8 teaspoon baking powder
1 egg
2/3 cup brown sugar
1 teaspoon cinnamon powder
1 teaspoon vanilla
1 1/3 cups oats
- Preheat oven to 350 degrees.
- Combine all the ingredients well using a rubber spatula.
- On a cookie sheet spread parchment paper and drop dough on sheet, I used a tablespoon for uniform sized cookies.
- Bake for 18 to 20 mins. When done, let cookies cool completely before removing from cookie sheet.
